Sunday roasts with duck fat potatoes, spritzes on a glass-covered terrace and a refreshed playground for the kids: Trinity St Kilda is preparing to reopen with considerably more on the menu.

The pub and bar will welcome guests back from midday on Friday 27 November 2026, following a $2 million renovation that expands its dining offering, introduces all-season weather protection and increases capacity to 450 people.
Set in a former heritage church hall, Trinity has been part of St Kilda’s drinking, dining and live music scene since 2022. Its next chapter brings a larger kitchen, new gathering spaces and a summer entertainment program spanning acoustic afternoons, duelling pianos and Saturday-night DJs.
A Bigger Kitchen and a Fresh Direction for Food
The biggest change for diners sits inside a 12-metre shipping container.
Replacing Trinity’s burger-focused food truck, the new kitchen gives Nikakis Hospitality Executive Chef Ben Forrest room to deliver a broader menu of pub favourites, European dishes and food inspired by his Irish heritage.

Forrest, whose career began with an apprenticeship at Melbourne’s Hotel Windsor, has spent almost three decades working across hotel kitchens and casual dining venues.
His opening summer menu includes chicken paillard, prosciutto and melon, vodka rigatoni and burrata, alongside the Trinity Cheeseburger carried over from the original offering.
Another dish to watch is the Trinity Spice Bag, a plated interpretation of the modern Irish favourite. Developed through years of testing as a venue special, it features the kitchen’s own secret spice mix.
Sunday Lunch Takes Centre Stage
The new weekly Sunday roast is perhaps the clearest expression of Forrest’s approach: familiar food with attention paid to the details.
Inspired by the Sunday lunches cooked by his mother and grandmother, it will feature duck fat potatoes seasoned with rosemary grown in Trinity’s kitchen garden, gravy made with pan juices and Yorkshire pudding cooked in beef tallow.
Forrest describes those family meals as being as much about conversation and time together as the food itself — a tradition he hopes to bring to the venue.

The first roast will be served on Sunday 29 November, with the offering available every Sunday from midday until sold out. More dishes inspired by his family’s Irish cooking are planned for the autumn and winter menu.
On the drinks front, Trinity’s Spritz All Day selection returns with limoncello, Aperol, Campari and Hugo spritzes. A new cocktail list is also in development, with seasonal updates planned.
A Terrace Built for Melbourne Weather
The reworked Trinity Terrace introduces a clear glass roof and a glass wall along Chapel Street, providing weather protection while preserving views of the building’s heritage red brick façade.
Designed by BSPN, the space includes upgraded acoustics and flexible furniture, allowing it to shift between seated dining and standing functions for up to 200 guests.

Elsewhere, a new 20-person table in the main hall caters for larger get-togethers, while the courtyard gains an undercover pool table.
More for Families and Group Gatherings
For families, the refreshed playground brings additional equipment, including a bayside-themed “Ride the Wave” rocker.
Linked umbrellas add protection from sun and rain, while an outdoor television offers a spot to catch the cricket or footy.

The new Fun Room overlooks the playground through chapel-style windows and accommodates up to 24 seated guests or 50 standing. Joining The Hideaway and The Mezzanine, it adds another option for birthdays, family celebrations and smaller functions.
Live Music Through Summer
Opening weekend will launch Trinity’s summer entertainment program, with duelling pianos on Fridays from 8pm and acoustic musicians playing the terrace from 2pm to 5pm on Saturdays and Sundays.

Melbourne DJs will take over the main hall on Saturday nights from 8pm. The renovation also introduces licensing for outdoor music until 1am.
With a broader menu and spaces designed for everything from family lunch to late-night drinks, Trinity’s relaunch gives the familiar St Kilda venue a fresh reason to gather.
