Melbourne’s Most Luxurious New Dining Experience Has Arrived – And It’s All About Caviar


Tucked away inside the moody, gold-lit interiors of La Madonna, a new limited-time dining experience is redefining luxury in Melbourne’s food scene.

Introducing Caviar After Dark – an indulgent five-course degustation that places premium caviar at the centre of every dish. Running from 12 May to 31 July 2026, the experience is currently the only all-caviar degustation menu available in Melbourne, offering diners the chance to explore the delicacy in ways that feel both refined and surprisingly approachable.


Set within the elegant surrounds of Next Hotel Melbourne, the evening begins long before the first course arrives.

From the dramatic gold chain chandelier winding through the staircase to the intimate lighting and curved banquettes, La Madonna balances sophistication with warmth, creating a dining space that feels elevated without being intimidating.

At the helm is Michelin-trained executive chef Jacopo Degli Esposti, whose menu showcases the versatility of Anna Dutch Caviar across every course.

Rather than using caviar as a finishing touch, here it becomes the hero ingredient – woven thoughtfully into each plate to highlight different textures, salinity and flavour profiles.

The experience opens with an oyster raviolo paired with leek velouté and caviar – rich, delicate and beautifully balanced. One of the standout dishes of the evening is the Australian bluefin tuna tartare, layered with basil coulis and topped generously with Anna Dutch Baerii caviar. The combination feels fresh and clean, while still delivering the unmistakable indulgence caviar lovers seek.

Another highlight comes in the form of the spaghetti au caviar – a comforting winter dish where Gragnano IGP spaghetti is coated in silky lemon butter before being finished with premium caviar. It’s luxurious without feeling overcomplicated, allowing the quality of the ingredients to speak for themselves.

The degustation continues with marron, celeriac and champagne sauce before ending on one of the most creative dishes of the night – La Madonna’s house-made negroni caviar, spherified from the restaurant’s own barrel-aged negroni and served in an oyster shell. It’s playful, unexpected and the perfect finale to an experience built around texture and technique.

What makes Caviar After Dark particularly memorable is that despite its luxury focus, the atmosphere remains welcoming and relaxed. There’s no sense of pretension – just beautifully executed food, thoughtful hospitality and a rare opportunity to experience caviar in a completely different way.
