Melbourne takes its coffee seriously, but at Regulars on Little La Trobe Street, things get seriously cold. This little CBD café has become known for its viral Dirty −85°C coffee, and there’s a matcha version to tempt you too.

We stopped by to try both, and they were sensational. While the coffee deserves the attention, my favourite was the Pistamatcha, served with oat milk and crushed pistachios. So good!
What is −85°C dirty coffee?
The name refers to the temperature used to freeze the glass, rather than the temperature of the drink itself.

At Regulars, the glasses are chilled in two stages before milk is added, freezing around the edges while staying liquid in the centre. A ristretto shot is then poured over the top, creating those distinctive layers of coffee and milk. There’s no ice to water it down as you drink.

It’s a different experience from grabbing your usual iced latte, with the frozen glass and contrasting layers making the first sip part of the fun.
The café’s advice? Sip first, stir later. Give yourself a chance to taste those layers before mixing everything together.
Our favourite: the Pistamatcha
As much as we enjoyed the dirty coffee, the Pistamatcha was the standout for me.

Ours came with oat milk and crushed pistachios, bringing together that lovely matcha flavour with a nutty finish and a little crunch. It’s the drink I’d happily head back for, especially when I’m after something different from my usual coffee order.
Matcha fans can get in on the frozen-glass experience too, with Regulars’ −85°C matcha bringing oat milk and matcha together in its signature chilled serve.
If you’re visiting with someone who loves coffee while you’re more of a matcha person, this is a fun spot to try one of each.
More than a viral coffee stop
There’s plenty of coffee experience behind the café. Regulars is owned by husband-and-wife team Eddy and Prem Pan, with Eddy previously spending seven years as head roaster at St Ali.

The menu also includes cold brew and other matcha drinks, alongside baked treats from Tori’s.
For us, though, the two frozen-glass drinks were the reason to visit. Both were worth trying, and the Pistamatcha with crushed pistachios earned a firm spot on my return-order list.

Add Regulars to your list for a coffee stop during your next Melbourne CBD wander – particularly if pistachio and matcha are already two of your favourite things.
